Ayurvedic Summer Minestrone

It’s so good to be back home! I can cook for myself again – yay! After 3 weeks of hotels and restaurants I was so happy to make a simple and quick veggie soup last night. Of course it has an *Ayurvedic* twist!

Barbra’s Summer Minestrone:

I used 1 red onion, 4 carrots, 4 celery sticks, 3 small tomatoes and 2 potatoes.

Chop organic veggies into a pot. Add olive oil, *black cumin seed*, dried Italian herbs, Himalayan salt. Heat and stir for a few minutes. Then add white beans. I use the organic ones in a glass jar that are already cooked otherwise you need to plan ahead and pre-soak the beans overnight and cook for a very long time next day.

Add organic veggie stock power (no glutamate) and hot water. Simmer on a low heat for 1-2 hours in a heavy pot to get the very best flavour…or if you can’t wait just simmer until the veggies are cooked. It will taste even better next day.

The potatoes and beans make it more of a meal. I served the soup with pumpkin seed oil drizzled on top. Thank you to my Austrian students who got me back onto Kernöl!

Pumpkin seed oil: rich in antioxidants (this effectively means anti-aging), magnesium, zinc, fatty acids and anti-inflammatory agents.

Red onions are high in polyphenols (antioxidant/cell protection/anti-inflammatory/cancer prevention).

*BLACK CUMIN SEED*. In Ayurvedic medicine they are referred to as the “Seed of Blessing”. They are considered anti-cancer (promote cell stability), and helpful for liver damage and arthritis. They are anti-inflammatory, antioxidant and anti-tumour.

Sattvic and alkalising, black cumin seed pacifies Vata and Kapha while helping to build Agni (digestive fire – the key to good health in Ayurveda!).

They have been found to support cardiovascular health (lower cholesterol) and the death of brain and breast cancer cells. They are positive for the nervous system (memory boost, the ability to focus) and the recovery of injured nerves.
